Chefs Knife Reviews and Buying Guide:

We just recently did a review on Kitchen Knives and found that the most important piece in any set is the chef's knife. In an effort to give our readers the most informed decision making, we took on the task of finding which chefs knives are the best and which ones rate the highest in head to head comparisons. To start with, a chefs knife usually measures 6 to 12 inches in length, with the 8 inch knife being the the one of choice for most home chefs and professionals. When it comes to food preparation for meals, the chefs knife is great at chopping, slicing, and mincing. You'll find most chefs use this favorite kitchen knife in preparing all types of food. The flat, broad blade is what sets this knife apart from others and makes it perfect for all cutting tasks. My wife uses her knew Wusthof Classic 8-inch chef's knife for cutting vegetables, slicing fruit, dicing onions, and chopping carrots. Just place your food on a cutting board and let the natural shape and weight of the knife take over and rock it back and forth to cut what you need.

The versatility is what I appreciate most with the chefs knife. I find myself turning the knife on its side to crush garlic and other herbs or spices. The handle is comfortable and allows me to efficiently prepare our meals with my wife nearby. What should you consider when buying a chefs knife? It used to be that you went with the heavier German made knives, but today many professional and home chefs are turning to the Japanese chef knives which have several advantages such as sharper and thinner blades, harder steel blades, and they are lightweight but still give you balance. Look for a chef knife with a full tang (blade extends through the handle), one made with forged steel (better than stamped steel), and it should have a good feel in your hand - referred to as "balance" amongst chefs. It needs a comfortable handle which allows for precise cuts and control. We found dozens of reviews online on websites like Cookingcache.com, Cooking.com, About.com, and Cookingforengineers.com. Amazon.com offers up excellent owner reviews and feedback on all brands of chefs knives which is the perfect place to start your search. NYmag.com has an article from Tom Mylan on chef's knives and Christopher Allen Tanner did a great writeup on his blog about the "best chef knife". The top brands include R.H. Forschner by Victorinox, Henckels, Kyocera, Wusthof, Global, Shun, Rachael Ray, Furi, Chicago Cutlery, Oxo, and Komachi. You can find the top selling chef knives on Amazon.com.

Best Chef Knife:

The R.H. Forschner by Victorinox 8-Inch Chef's Knife with Black Fibrox Handle is a very popular and top rated model online. The high carbon stainless steel blade lets you resharpen it as many times as you like. The handle has an ergonomic design that any chef would love and it's slip resistant for safety in the kitchen. For the price it's hard to beat out the Forschner chef knife since it sells for less than $20. Another great choice is the Furi Rachael Ray Gusto-Grip 7-Inch, although it's a bit more expensive than the Victorinox listed above. The Furi chef knife is slightly smaller at just 7 inches in length and a bit "heavy" say a few owners, but overall it delivers in the kitchen.

Top Rated 8-Inch Chef's Knife:

If you are willing to spend a little more for a chefs knife, consider the Global 8-Inch 20cm Cook's Knife which is around $90. With Global knives you get precision and balance on the 8 inch blade that is lightweight. The blade on the Global chef knife is made with high-tech molybdenum/vanadium stainless steel and you'll find it's razor sharp. The handle is a bit different from the other knives we looked at - it is made with stainless steel and has a dimpled effect for a better grip. Owners say the knife works great on slicing vegetables, dicing onions, and cutting bell peppers. Another excellent find is the Shun Classic 8-Inch Chef's Knife which is very versatile and made from VG-10 stainless steel. The handle is comfortable and won't fatigue your hand or wrist if you have a lot of chopping, slicing, or dicing to do. The Japanese chef knives are becoming commonplace in all stores as the German brands are getting pushed in this market. Check out all the 8 inch chef knives on Amazon.

Best Value 10-inch Chef Kitchen Knife:

If 8 inches is not enough in a chef knife, then go with the larger Forschner 10-Inch Chef's Knife which rates well on Amazon and in Cooks Illustrated cooking tests. It's not the most expensive model around at only $18, but don't be put off by the price on this chefs knife since reviews show it does a fine job in the kitchen. Owners feedback on this model say it's "lightweight, sharp, and versatile" making all your food prep easy. It's an excellent "value buy" when you consider what is available on the market. The knife is definitely not meant for professionals, but most home chefs should consider it.

Professional Chef Knife:

Perhaps the knives listed above are not professional enough for you. We have just the answer with the Chef's Choice Trizor Professional Chef's Knife 8-in. for about $135. Chef's Choice offers the same knife in 6 and 10 inch options which are also available online. We found Chef's Choice products popping up in several reviews online for knives and this one was constantly mentioned.

Ceramic Chef Knife:

You'll find the ceramic knives made mostly in Japan and they have been around for sometime now. There are advantages to using a ceramic chefs knife - very sharp blade, it's both rust and stain proof, easy to clean, and doesn't need much sharpening. The one drawback is that if you drop or mishandle the blade while washing it, the odds are that it will chip and break. So you need to be very careful when using it compared to other steel knives. Kyocera is the #1 seller of ceramic knives and models like the Kyocera FK160wh White Ceramic Chef's Knife 6-in are gaining in popularity on cooking and consumer websites. They are priced around $80.
