Very few fish offer the variety in ways to cook and prepare a salmon. The most popular way to cook salmon is to grill it. Baked salmon is another cooking method along with poached salmon. Grilling (barbecue) salmon is what I prefer and I usually marinade the salmon with teriyaki sauce or barbecue sauce for the best flavor. I've found that when cooking certain salmon (wild, farm raised, etc) the coloring can be quite different and the texture varies considerably. I love salmon that just flakes right off, but recently some of the farm raised salmon I had been buying was tougher and not flaky.
